Jollof Sauce Oxtail and Butter Bean Stew

I love stews, they are hearty and delicious. Though it’s summer and people tend to go for summery dishes, I still make stews.

They always taste better the day after which means I can make a lot to eat for a couple of days and therefore spend less time in the kitchen.

I take food to work instead of buying lunch and a good stew can makes a healthy lunch as well.

So last night I madeĀ  a quick oxtail stew using our jollof sauce.

This is how easy it was to make

 


 

You will need:

*1kg of oxtail

*1 can butter beans

*1 brown onion chopped

*Salt and pepper seasoning (or any other seasoning blend of your choice)

*1 jollof sauce jar

 


 

Method:

Boil the oxtail with a little salt in a pressure cooker for 30 minutes (or a normal saucepan for about an hour)

After this, pour out the stock produced from boiling the meat and set aside.

Heat about a tablespoon of oil in the same pot/saucepan and add the oxtail meat and fry until golden brown.

Add the onions to the meat and fry until they are soft.

Add the seasoning and cook for another 2 minutes.

To this you can now add a jar of jollof sauce and pour the stock set aside earlier.

Leave to cook until the sauce has thickened and oxtail soft and falling apart.

You may need to add water if the meat is not soft enough and simmer .

Rinse the butter beans from the tin in a sieve.

Add to the sauce and leave to cook for another 10 minutes.

Serve with rice/potatoes/sadza and some vegetables.

I had mine with some wholemeal rice.
