Jollof Sauce Pizza – Meat Feast
Using the Pepper and Stew jollof sauce we also made a meat feast pizza.
This recipe serves 2-4 people
Pizza Base:
For the pizza base you can use shop bought or use the following recipe:
*225g strong plain flour
*1/2 tsp salt
*1/4 tsp quick-acting dried yeast
150ml warm water
1 tbsp extra-virgin olive oil
Method:
Sift the flour and salt into a bowl and stir in the yeast.
Make a well in the centre and gradually add the water and oil to form a soft dough.
Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
Place lightly in a lightly oiled bowl and cover with clingfilm.
Leave to rise a warm place for 1 hour.
Knock the pizza dough with your fist a few times and shape.
Divide the dough into four equal parts (or leave whole if you wish)
Roll out each part thinly on a lightly floured board.
Place the dough on grease proof paper and on a baking sheet and set aside.
Pre-heat the oven 220c/Gas 9
Topping:
*About half a jar Pepper and Stew jollof sauce (or more)
*1 red onion fried (caramelised)
*4 rashers smoked bacon
*500g lean minced meat
Handful of grated mozzarella cheese
Method:
Heat 1-2 tbsps oil and fry the bacon till browned, set aside.
In the same pan, fry the red onion, add the minced beef and brown. Add the fried bacon and jollof sauce and leave to cook for another 5-8 minutes. Taste and season.
Spread the mince meat mixture on the pizza dough and scatter the mozzarella cheese.
Drizzle evenly with a little olive oil
Bake the pizza for 10-12 mins until crisp and golden around the edges.
