Plantain Loaf
Don’t throw away your over ripe plantain! Like bananas they can be used to make cake.
Here ‘s how.
Ingredients:
160g Butter
140g Caster sugar
2 Eggs – beaten lightly
225g plain flour (I used spelt flour)
1 tsp baking powder
1/2 tsp Bicarbonate of Soda
220g Over ripe plantain – mashed
1/4 tsp vanilla/banana extract
Method:
Cream butter and sugar till light and creamy.
Pour in eggs gradually and beat till creamy.
Add in mashed bananas and banana/vanilla extract and mix well.
Add in cake flour, baking powder and bicarbonate of soda and beat until they are mixed through.
Pour into an 8 inch loaf tin.
Bake at 175C for about 50 to 60 mins. or until cooked.
Once baked , put on cooling rack and an optional bit, to decorate I mixed 112g icing sugar with juice of half a lemon and sprinkled with plantain crisps.
